3 Easy Peach Recipes for all those Summer Peaches

Did you know August is Peach month? If you are like me, I LOVE peaches. I actually drive to Palisade CO yearly to get their awesome peaches. I love to can them to have them year round and to create yummy recipes. To me, peach time is a reminder that summer is coming to an end and Fall is fast approaching. I put together 3 of my favorite peach recipes here, just incase you have to many peaches and need to use them up quickly. 

  

 

PEACH COBBLER RECIPE

With summer in full swing, and all the delicious summer fruits available, I decided to make a delicious, homemade, fresh peach cobbler. I have made quite a few peach cobblers in my day but this one is a bit different. It’s mostly organic for starters. I try to use the healthiest ingredients and this tastes just as good as the other delicious cobblers out there. A perfect summer dessert, this made from scratch fresh peach cobbler is packed full of fresh, juicy, ripe peaches then topped with a delicious cake-like, crunchy topping.

This cobbler is super easy to make and the smell of this cobbler baking reminds me of fall, which is right around the corner. Fall is my favorite time of year for baking. All the delicious desserts that are made during the fall are always a favorite. I cannot wait to start baking all sorts of delicious fall desserts. But in the meantime, how about baking your family a delicious fresh peach cobbler? 

Fresh Peach Cobbler

For the filling:

  • 8 large fresh peaches, peeled, pitted and sliced
  • 1/3 cup organic brown sugar
  • 1/3 cup organic sugar
  • 1 tsp lemon juice
  • 2 tsp corn starch
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg

For the topping:

  • 1 1/2 cups all purpose flour
  • 1/3 cup organic brown sugar
  • 1/3 cup organic sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 stick earth balance® butter, cut into small pieces
  • 1/3 cup boiling water

Additional topping:

  • 4 tsp organic sugar
  • 1 1/2 tsp cinnamon

Instructions

  1. Preheat oven to 425°
  2. Peel, remove pits and slice peaches. Add to large mixing bowl.
  3. Sprinkle brown sugar, sugar, cinnamon, corn starch, lemon juice and nutmeg over peaches.
  4. Stir until peaches are coated.
  5. Pour into an ungreased 9 x 13 baking dish.
  6. Bake for 10 minutes, then remove from oven.
  7. In a medium mixing bowl, whisk flour, sugar, brown sugar, baking powder and salt together.
  8. Using a pastry blender, mix butter into flour mixture and blend until mixture becomes crumbly.
  9. Pour in boiling water and stir until combined.
  10. Spoon mixture over peaches and spread gently making sure to cover the peaches.
  11. In a small bowl, mix organic sugar and cinnamon together and sprinkle on top of the cobbler.
  12. Bake for approximately 35 minutes, or until topping is golden brown.
  13. Top with dairy-free vanilla ice cream (or ice cream of your choice).
  14. Best served warm. Enjoy!

Homemade Fruit Leather


Homemade fruit leather is so easy to make and is a great healthy snack! I used peaches for this recipe, but feel free to use your favorite fruit. Strawberries and raspberries are my other favorite fruits to use.

 

SERVINGS1 pan fruit leather-about 10 fruit roll-ups

Ingredients  

  • 3 cups ripe chopped fruit I used peaches this time
  • Sweetener to taste (I use honey or maple syrup)

Instructions 

  • Preheat oven to 150 degrees F or the lowest temperature your oven will go. Line a 11 x 17 baking sheet with a Silpat baking mat. Set aside.
  • Puree the peaches and sweetener of your choice in a blender or food processor until smooth. Pour fruit mixture onto prepared baking sheet and spread to about a 1/8″ thick. I always pound the baking sheet on the counter a few times to make sure the fruit mixture is evenly distributed.
  • Place baking sheet in the oven and bake for 6-8 hours, until pan is set and the center is not tacky. Remove from oven and let cool to room temperature. Gently peel off the fruit leather from the Silpat. Cut into squares or strips using a pizza cutter, knife, or scissors. If you want to make fruit roll-ups, roll the strips in parchment paper. Store in an air-tight container.
  • Note-if you don't have a Silpat baking mat, you can line the baking sheet with plastic wrap or parchment paper. The plastic wrap will not melt in the oven because the temperature is so low. I prefer to use a Silpat though. Get creative and use your favorite fruits, you can also mix fruits! The fruit leather will keep up to a month in an air-tight container.
